Calçots are a variety of tender onion (similar to a long onion or leek), traditionally grown in Catalonia, especially in the Valls area (Tarragona).
They are larger and milder than regular onions and are usually eaten grilled.

- Special sauce: They are always served with romesco or salvitxada sauce, made with roasted tomatoes, nuts, garlic, and olive oil.
- A fun experience: Traditionally, you wear a bib and eat them with your hands, lifting the calçot high and letting it drop whole into your mouth.
- Cultural pride: Valls (near Tarragona) is considered the birthplace of the calçotada and hosts a big annual festival dedicated to this product.
- Seasonal product: The calçot season runs from late November to early April, making them a winter and spring delicacy.
